30 minute meals


Being the wife of a car salesman, I usually end up eating dinner without Nathan. So, I've joined up with some other wives of car guys (who all work late into the evenings too) and we've started a meal making club! We've decided to cook meals from Rachel Ray's 30 minute meals. Some of the meals we've had are Chicken Scarpariello (I know it sounds hard to make, but it's not), Chicken with Leeks, Lemon rice pilaf, Jerky Turkey Burgers with Island Salsa and Chili Lime Avocados(my favorite). Click here for the recipe! Although, I recommend making some more of the chili lime sauce and drizzling it over the burgers for extra flavor! Anyways, I really like the variety in the meals I'm having now! Not only that, but I get to have some adult conversations and I don't have to cook every night of the week!

Ashlyn is becoming mobile now! She's not quite crawling yet (she's got the hands and knees and rocking down), but she can get around the room pretty well by rolling or scooting! I thought it was tough watching 3 kids now, but as soon as she's crawling good, I'm in for a tough days work!

I love being a mom! I was reading Rielyn her bedtime story last night and she did the sweetest thing! I was reading her "I love you forever" and if you don't know or have that book for your kids, it is a must have. The just of the story is that the mom, from when her son was a baby, through teenage years and up to adulthood, would go into her sons room at night when he was asleep and rock him and sing "I love you forever, I like you for always, as long as I'm living my baby you'll be." It ends with the mom being old and in the hospital and her son goes to visit her and he does to her what she did for him growing up. He held her and sang to her but with "my mommy you'll be" at the end. Then he goes home and picks up his baby and sings to her too. I could barely finish the story without balling! Anyways...at the end of the story, Rielyn looked right into my eyes and said "Mommy I'll always love you"! So, all the terrible tantrums and all the messes and all the ugly faces she made at me all day...completely worth it just for that!
